History of Lactobacillus Thermophilus

-It was first isolated in 1924 by Henery Ayers and T. Johnson jr. where they were only locating "pin point" colonies from pasturized milk.

Reproduction of Lactobacillus Thermophilus

-It is a facultative anaerobe, but grows best aerobically

-Will grow from 3000. (86°F.) to 6500. (150°F.).

-The optimum temperature for growth lies between 5000. (122°F.)

and 62.8°C. (145°F.). It grows with great rapidity at the pasteurizing temperature.

-the organism grows best in slightly acid media.

-a pH higher than 6.0 in agar media, determined eolorimetrically, prohibits growth.

Beneficial Properties of Lactobacillus Thermophilus

-is used in "probiotics" to help the skin, colon, and immune systems.

-can be taken orally or through creams used on the face.

Problems with lack of Lactobacillus Thermophilus

-some people have complained of it changing the taste of milk

-other than this it is not harmful though related bacteria are

Intresting or Unusual Facts on Lactobacillus Thermophilus

- it is heat resistant and can withstand extremely high temperatures of up to 70 degrees C.

- this is why it can live through the pasturization process.

Resent Research on Lactobacillus Thermophilus

- the USDA-ARS has developed some new sencing technology to detect heat resistant toxins and bacteria (like lactobacillus thermophilus) and it will be able to remove these bacteria easily and cost effectively.
